Since I have a family, my work schedule is a legitimate concern. What exactly are my chances of having a work schedule that I want, specifically weekends off, if I work for Sac PD?

As a new officer, your chances are pretty slim for getting the days off that you want. Officers sign up for teams and days off based on their seniority. If you do not have very much seniority, you will sign-up for whatever days off are available.
